This wonderful pecorino ripens for almost 90 days on traditional spruce wooden planks in mountain area. Its characterized by a thin brown rind and a friable, pale white interior.
Rich in flavor it has an unique mild taste with a perceptible hint of nuts and dried fruit. Great when served as a table cheese with Tuscan cured meats, walnuts, honey and jam. Pairs perfectly with some fresh beer or full-bodied red wine.
