Pienza is an old medieval town in the province of Siena. The sheep can graze in the surrounding natural environment with fresh herbs on dwarf willows in the green hills.

 

The delicate and savory cheese under the thin red rind is perfect pure as a snack with walnuts and fig jam or on the cheeseboard completed with a Chianti like the famous Brunello.
