Pecorino aged in grotto
An excellent model of our production made with sheep's milk that contains a rich and intensive taste. The thin rind aged in grotto covers a center with delicate and mild taste similar to matured dried fruits.
The lightly taste of nuts becomes more intensive during the ripening and reminds toasted nuts.
Indispensable on every cheeseboard it's perfect complemented by crunchy bread to savor its taste and texture.
Also splendid with acacia honey or fig jam. Serve it with a Tuscan red wine like a Chianti classico.
