Fresh and young cheese that is traditionally produced in the spring and paired with some seasonal fruits. The Baccellone is a soft white rindless cheese with a milky taste and a dry fresh feel in the mouth.

 

The favorite pairings are bread, ham and legume (fava bean) otherwise marinate it with some good Italian olive oil. 

 

Perfect as stuffing for salty cakes served with a sparkling white wine or fresh beer.
