The Pecorino di Fossa is a very unique type of cheese that is enveloped in white towels and put into subterranean pits with a fiasco shape. As usual the ripening begins at the end of summer and the beginning of autuun so the dry tuff convert the delicate taste of sheep's milk into an intensive deep flavor with an uncommon smell.

 

It is the perfect cheese to use grated for lots of delicious preparations like stuffings for cannelloni or crepes. Pairs perfectly with sweet white wine or mature red wine.
