Pecorino aged in ash
An ancient way of conservation is the aging of cheese in ash like we do with our pecorino Il Cenerino. The ash absorbs the excessive moisture during the ripening and the interior of the cheese gets lightly dry and more spicy.
The perfect choice for a cheese course as starter course or in place of dessert, paired with white wine or light beer.
